It's because of the sudden boom of crypto currency mining. Some of the currencies are so cheap now you can make a mining machine with practically anything, so stores are sold out of everything. The demand for GPU's has exceeded the supply and thus the prices have gone up

It's happened before, with all sorts of components. HDDs went stupid for a while a few years ago.
