My local Best Buy (Canada) finally got a shipment of the new Zelda BOTW amiibo’s so I got the Link (rider). On the back of the box or eluded to the fact of maybe getting a better saddle as similar to the Link (archer) it depicts a special bow. I tested it out tonight and all I got was 5x shock arrows plus random food items. Kind of annoyed! Anyone experience this or have any info?

You get one random item once a day per amiibo. The items on the back of the box are just the rarest possible outcomes.

Can't you save.. Use the amiibo and reset until you get what you want? Or am I making that up.

The BotW figs will give you game matching items. Getting good arrows from the archer, guardian parts from guardians, etc.
Random figs will give basic supplies like food but still a huge help early on.
