How hard would it be to remove the AIO cooler on my CPU so I can do a full loop for liquid cooling (CPU and GPU)

If I understand what you're asking correctly...
Very easy. It's the same as removing any other cooler, just unscrew the retaining screws and pull it off the CPU.
