beat it and do all the side quests and then mod the shit out of it.

Iron man it. Or do the npc challenge. Play the game as a npc in skyrim, and slowly work your way up to mercenary, then adventure and then finally finished the game. There is a mod for it, cant remember the name, that will give you hunger and hydration and bars that you need to keep watch of and what not. It's fun, tedious but fun.

You will come across a giant after you go across the bridge from Riverwood, you may think "oh cool, a giant" and approach it. Don't approach it, I repeat don't approach it!
