Has anyone been successful in using at&t hotspot for their switch? I upgraded my plan for unlimited but I get a NAT D and it won't connect.

Also I'll add that I am trying to use an iPhone 7. I definitely need to figure this out before Splatoon 2.

Your phone company will throttle you if you land yourself in the highest % data usage for your region.

Funny thing is I did the same but I haven't tried connecting. I'm at home now so trying at home won't tell if it really works.
