the elder scrolls series is like that, but i assume you have already played them

hmm, its not open world but i think might and magic, dark messiah is a first person hack and slash, been a while since i played it.

pure magic combat i think lichdom battlemage is pretty good, not sword and board but magic fps, interesting spell customization system

thats all i can think of, none open world though sorry, its not a very explored mechanic, fps medieval
